Cheesy Tomato Basil Orzo

  • 4 ounces whole wheat orzo pasta
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 15 ounces cherry tomatoes, sliced
  • ⅔ cup fresh mozzarella, grated
  • ¼ cup fresh basil, chopped
  1. Boil a large pot of water. Salt the water and add the orzo. Cook until just al dente, about 7 minutes, and drain.
  2. Meanwhile, heat the olive oil in a sauté pan over medium heat. Add the garlic and cook until softened, about 2 minutes. Add the tomatoes and cook until they soften and "burst," about 3-5 minutes more.
  3. Remove from heat and add the cooked orzo, grated mozzarella, and chopped basil. Stir until cheese is melted and well combined. Serve.
