Fresh, simple, and ready in 15 minutes, this strawberry avocado salad is a summery twist on caprese, with mozzarella, basil, avocado, and fresh berries.
After a 5-month-long New England winter, I was so ready to welcome spring.
Aaaand it never arrived.
Instead, we’ve seen nothing but dreary skies and endless rain for weeks on end.
It’s almost June, and Trevor and I went out today in sweatshirts, boots, and raincoats (that’s been our daily uniform for the past several weeks).
But I do have one piece of good news: I have summer on a plate for you today!
This strawberry avocado salad has lots of juicy, sweet, fresh summer berries.
Despite the awful weather lately, the strawberries at our local grocer’s have been red, ripe, and delicious.
So we’ve been eating tons of fresh strawberries (and blueberries too)!
The rich, creamy avocado and mozzarella are the perfect complements to the slightly-tart-mostly-sweet berries.
I’ve been loving this particular strawberry avocado salad because it has a caprese twist: plenty of creamy mozzarella and fresh basil.
Plus a light, simple, 3-ingredient white wine vinaigrette dressing to bring everything together.
This strawberry avocado salad is really simple and quick to throw together in about 15 minutes.
I like serving this caprese as a starter or a side with grilled chicken or burgers.
It’s the perfect summer salad, so it’s a great complement to most grilled dishes.
Okay, so I haven’t seen summer yet.
But I’ve at least tasted it, and it’s so delicious!
