Avocado Toast BLT

One of my favorite recipes of the year, this comfort food makeover is a hybrid between a healthy avocado toast and a classic, comforting BLT.

2020 is just the kind of year to bring a person back to lots of good, old fashioned comfort food.

Or, at least, that’s what 2020 has done for me.

We’ve been eating this particular BLT recipe all summer.

Crispy, crunchy bread topped with crispy, crunchy bacon. Years like 2020 call for that kind of thing, in my mind.

This recipe is updated from the classic though.

It’s a comfort food makeover, a twist between a healthy avocado toast and a comforting BLT.

And I know this is crazy bold to say since, I mean, who could really improve on the delicious perfection of a BLT…

…but I think that the Avocado Toast BLT is much better than the classic BLT.

My new and improved BLT recipe includes avocado, lemon juice, and just one slice of bread.

There’s something about the freshness and creaminess of an avocado.

Plus the bright citrus zing from the lemon juice.

They balance out the salty, crunchy bacon perfectly.

Oh, and here’s another opinion of mine: the two slices of bread in the classic BLT are too much.

You miss the full flavor of the tangy tomatoes and the crisp lettuce when they’re smothered in too much bread.

One crispy toasted slice of bread – just like in avocado toast – is the perfect bread-to-topping ratio.

This recipe is easy to make in 30 minutes.

The whole process is really quick and simple, so this recipe is great for beginners.

There are just a few ingredients in this Avocado Toast BLT recipe.

Some are fresh ingredients:

  • Romaine lettuce
  • Grape tomatoes
  • Avocado
  • Lemon

Some are more indulgent:

  • Artisanal bread – keep your bread intake balanced by preparing these BLT’s with just one slice of bread each
  • Bacon – crumble the bacon over the top of the avocado toast for a comfort food fix. Just a little bacon goes a long way and adds a ton of rich flavor.

Here are some helpful tips for making this Avocado Toast BLT recipe.

  1. The toast doesn’t hold a lot of tomato or lettuce. So I use the rest of my lettuce and tomatoes to make a side salad.
  2. Cooking the bacon on a wire rack in the oven is the best way to get really crispy bacon that isn’t drowning in grease.
  3. The lemon is great for lots of reasons: it’s healthy, it keeps the avocado from turning brown, and it adds the most delicious tanginess to the recipe.

Description

One of my favorite recipes of the year, this comfort food makeover is a hybrid between a healthy avocado toast and a classic, comforting BLT. 


Ingredients

Scale
  • 4 strips humane, pastured bacon
  • 6 slices artisinal bread
  • 6 grape tomatoes
  • 1/2 cup romaine lettuce
  • 1 avocado, halved, pitted, and peeled
  • 2 tsp freshly squeezed lemon juice from 1 lemon
  • Sea salt and ground black pepper

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Place a wire rack on a baking sheet and arrange bacon on wire rack so no two strips are overlapping. Cook the bacon about 8-10 minutes, or until small bubbles form and the bacon turns crisp and golden. Very carefully remove the baking sheet from the oven, taking care to not splatter bacon grease. The bacon will continue to crisp as it cools on the counter.
  3. Arrange the bread slices on a baking sheet and place under the oven broiler. Toast until golden, about 3-5 minutes.
  4. Meanwhile, as bacon and bread are cooking, quarter the grape tomatoes and season with salt and pepper.
  5. Chop the lettuce.
  6. Put the mashed avocado in a bowl and cover it with the lemon juice. Season thoroughly with salt and pepper. Mash the avocado with a fork.
  7. Spread the mashed avocado over the slices of bread. Add the chopped tomato and lettuce. Crumble the bacon over the top.

Notes

Use leftover tomatoes and lettuce to make a salad to serve with your Avocado Toast BLT.
