This smoothie bowl is rich, creamy, naturally sweet and heavenly tasting, but packed with healthy superfoods too (like turmeric and mangoes)!

Once upon a time, a long time ago, I worked in a big city.

At noon everyday, in a skirt and heels, I’d ditch my desk and swing by one of a world of different lunch spot options.

One place I loved was Pret A Manger, which sold something called a Sunshine Bowl.

It’s a smoothie bowl topped with fresh fruit and granola and filled with high nutrition superfoods.

These smoothie bowls get their bright, bold “sunshine” color from two key ingredients: mangoes and turmeric.

Turmeric is a subtle, sweet spice that’s believed to be a healing, very powerful antioxidant.

Mangoes – packed with vitamins A and C – are believed to be great for bright eyes and healthy skin and hair.

 

I always felt so healthy when I ate one of these smoothie bowls, like I’d done something really nourishing for myself that day.

But, even more importantly, those sunshine smoothie bowls tasted so, so good.

Blended with coconut milk and bananas, this mango smoothie is really rich and thick and creamy and naturally sweet.

But when you add in some crunchy vanilla granola for another layer of flavor…

…and blueberries and pomegranate seeds for a little tartness and a little crunch…

…The overall combo is heavenly delicious!

I loved those sunshine bowls.

These days, I’m home taking care of Trevor in my sweats and trying to finally lose the remaining pregnancy weight.

But a few weeks ago, I had a thought.

Why not recreate my old favorite from Pret A Manger at home?

So, I bring you my own personal version of my old favorite: The Superfood Sunshine Smoothie Bowl!

It can be such a challenge to find that miracle recipe that’s super healthy but also really incredible tasting. 

These superfood smoothie bowls are that miracle recipe.

I’ve been making them weekly, and I’m completely addicted!

Description

This smoothie bowl is rich, creamy, naturally sweet and heavenly tasting, but packed with healthy superfoods too (like turmeric and mangoes)!


Ingredients

Scale
  • 2 cups frozen diced mango (10 ounces)
  • 1 large banana
  • 1 cup unsweetened coconut milk (7 ounces)
  • 1/2 cup 100% natural orange juice
  • 2 teaspoons turmeric
  • Vanilla Almond Granola
  • Blueberries
  • Strawberries, sliced
  • Pomegranate seeds (pomegranate arils)

Instructions

  1. Add the mango, banana, coconut milk, orange juice, and turmeric to a food processor or blender. Purée until mixture is smooth and creamy.
  2. Portion mango smoothie into small bowls for serving.
  3. Top each bowl with granola, strawberries, blueberries, and pomegranate seeds immediately before serving.

Notes

Store mango smoothie in an airtight covered container in the fridge for up to 3-4 days.

Or, portion individual servings of mango smoothie in small airtight covered containers and freeze. Transfer to the fridge to thaw one day before serving.

    These are my favourite smoothie bowls from Pret and I finally realised I should be making them in bulk at home! This recipe was spot on – the banana and coconut with the mango and orange juice make it creamy and luxurious while still feeling fresh and zingy to get the morning started. Now I pour them into small Kilner jars to take to work with me – walking smugly past Pret without being coerced to go in.
